This is one of my favourite snacks, together with the fried fish sticks (I will share this recipe in the future with you). It’s very easy to make, and tastes so much better than the ones bought in the supermarket or at McDonald’s. ;)
Ingredients (2 persons)
– 2 boneless & skinless chicken breasts (about 400 gr)
– 5 slices of white bread*
– 80 gr almonds
– 1 egg
– 50 gr all purpose flour
– pepper & salt *make sure you use old & dry bread
Preparation 1. Cut the chicken breasts into nugget size pieces and season with pepper & salt. 2. To make the bread crumbs for the crusting, remove the brown sides of the bread slices. Tear the bread into smaller pieces and place in the food processor. Whirl until desired coarseness. 3. Place the almonds in the food processor and chop them just a little bit, until they are still coarse pieces. 4. Mix the bread crumbs and almonds in a bowl. 5. Take a piece of chicken and dip it first in the flour, following by the beated egg and finish with the bread crumbs & almond mix. Make sure that the pieces are coated well on every side. Repeat this with all the chicken nuggets. 6. Heat oil in a large skillet over medium heat and carefully place the chicken nuggets in the oil. Cook until they are golden and crispy, about 4 minutes per side.
Serve with lemon mayo and fries and/or a fresh salad. Or if you want to keep it a bit lighter, just squeeze some lemon juice over the fried chicken (make sure you do this at the very last moment, because otherwise the nuggets will loose their crispness) instead of using mayo. Enjoy!
